Have you ever waited a while before eating an apple, and then noticing that the colour of the apple has changed? The same thing happens with avocados, too. We decided to do our science fair project on avocado oxidation because Tiffany enjoys making avocado rolls; however, the avocado is often unfinished and left overnight. In the morning, the avocado has changed. The oxygen has attacked the polyphenol oxidase in the avocado. A brown substance appeared on the avocado, making it look unappealing and unappetizing; however, there is a solution to preventing oxidation in fruits: citrus fruit juice. When citrus fruit juice is put on a fruit, the oxygen attacks the juice before attacking the fruit, therefore, making the fruit oxidize less quickly.
We wanted to find out which citrus fruit juice is most effective in preventing oxidation, so we put orange, grapefruit, lime, and lemon juice on the avocados that were cut in half. We left them overnight and checked them in the morning to see how much they oxidized and other changes on the avocados. All of them have oxidized at least a little bit. The control avocado oxidized approximately 35%. The avocado with lemon juice oxidized approximately 9%. The avocado with lime juice oxidized approximately 22.5%. The avocado with grapefruit juice oxidized approximately 10%. Lastly, the avocado with orange juice oxidized approximately 30%. Our results proved that the lemon and grapefruit juice was most effective at preventing oxidation.
