Our science fair project is on the oxidation of avocados. Our hypothesis is if we add lemon, lime, orange, and grapefruit juice to slices of avocado, then the pieces of avocado with lemon and lime juice will take the longest to oxidize. We hypothesize this because lemons and limes have the highest concentration of citric acid out of the four fruits we will be using. In our project, we hope to find out which citrus fruit juice out of the four citrus fruits we will use will slow down avocados from oxidizing the most. We decided to do this project because Tiffany enjoys making avocado sushi; however, she cannot always finish the whole avocado and leaves it overnight. In the morning, she finds that the avocado has turned brown and does not look very appetizing. Therefore, she does not want to eat it.
